Croquetas de patata - Potato croquettes


  • 750 gramos de patatas poco harinosas
  • ½ cucharadita de sal
  • 3 yemas de huevo
  • 3 o 4 cucharadas de pan rallado
  • 1 pizca de nuez moscada rallada

Para empanar:

  • 2 cucharadas de harina
  • 2 claras de huevo
  • 3 cucharadas de pan rallado

Para freír:

  • 500 gramos de grasa de freír o 1 litro de aceite caliente



1. Cocer las patatas con sal como en la receta anterior.

2. Vaciar el agua de cocción, dejar que las patatas pierdan bien el vapor y aplastarlas con el prensapatatas.

3. Remover la masa de patata con las yemas de huevo y el pan rallado necesario para conseguir una masa consistente no pegajosa.

4. Condimentar la masa con sal y nuez moscada y formar con ella un rollo de unos 6 cm de diámetro.

5. Cortar el rollo en rodajas de unos 2 cm de grueso y, con las manos ligeramente enharinadas, formar con dichas rodajas rollitos parecidos a corchos de botella.

6. Rebozar los rollitos primeramente en harina, luego en la clara ligeramente batida y, por último, en el pan rallado.

7. Calentar la grasa de freír o el aceite a 190-2000 C en una freidora o en una olla alta.

8. Freír las croquetas en porciones durante unos 6 minutos, dorándolas por todos los lados, sacarlas del recipiente con la espumadera, dejarlas escurrir sobre un papel absorbente y ponerlas en sitio caliente.
