Croquetas cantábricas - Cantabrian cod croquettes

Cantabrian cod croquettes. The dried salt cod in this recipe gives the croquettes their unique flavor. Although fresh fish is always available in Asturias dried fish is as popular here as in the rest of Spain.

  • 500 g dried salt cod, soaked overnight
  • 500 g potatoes
  • 100 g butter
  • 1 onion, finely chopped
  • 2 eggs, beaten
  • freshly ground black pepper
  • 100 g fresh breadcrumbs
  • oil for shallow frying


1. Rinse the cod under running cold water. Place in a pan adding just enough boiling water to cover and poach for 20 minutes.

2. Drain and cool. Remove the skin and bones and flake the fish. Cook the potatoes in unsalted boiling water until tender.

3. Drain and mash with half of the butter. Sauté the onion in the remaining butter until soft.

4. Add the cod to the mashed potato with the onion and a little beaten egg. Season the onion and a little beaten egg.

5. Season with pepper and beat together thoroughly. Shape into small finger -shaped croquettes.

6. Roll in beaten egg and coat with breadcrumbs. Heat the oil in a deep fryer and fry the croquettes until golden brown. Drain on absorbent kitchen paper.

7. Serve in individual bowls as a starter or "Tapa".
