Arroz con guisantes - Rice with peas

Esta es una manera tan apreciada de servir el arroz como guarnición, aunque también puede servirse en ensalada como plato principal. El arroz debe quedar blando, y el agua no debe ser absorbida por completo. El jamón Serrano puede ser sustituido por tocino.

Ingredientes:

  • 2 cebolletas con sus partes verdes
  • 60 gramos de jamón Serrano (opcional)
  • 80 gramos de mantequilla
  • 1 litro de caldo de carne
  • 400 gramos de guisantes pelados
  • 250 gramos de arroz de grano redondo
  • 50 gramos de queso parmesano rallado.

Preparación:

1. Lavar las cebolletas, escurrirlas y cortarlas en pequeños trozos, incluidas las partes verdes. Derretir 40 gr de mantequilla en una olla y freír en ella las cebolletas hasta que adquieran un aspecto dorado.

2. Añadir el jamón y remover todo unos 5 minutos hasta que se tueste ligeramente. Calentar el caldo de carne. Poner los guisantes en un colador, lavarlos al chorro de agua fría y dejar que escurran bien.

3. Mezclar los guisantes con las cebolletas y el jamón (opcional), removiendo la olla convenientemente para que la grasa se reparta por igual.

4. Añadir ½ taza de caldo de carne y poner a hervir. Poner el arroz en un colador y lavarlo al chorro de agua fría hasta que esta salga limpia.

5. Añadir el arroz a los guisantes y remover con cuidado. Echar por encima ½ litro de caldo de carne, volver a ponerlo al fuego, taparlo y dejarlo cocer hasta que se absorba el caldo casi por completo.

6. Ir vertiendo taza a taza el resto del caldo, a medida que éste no resulte casi visible en la olla. Dejar cocer el arroz durante un total de 20 minutos. Debe de quedar suelto y sin que el caldo haya sido absorbido del todo.

7. Mezclar con cuidado el resto de la mantequilla y la mitad del queso parmesano. Disponer el arroz en una fuente precalentada y añadir la otra mitad del queso parmesano.
