These little puffs are usually filled with fresh whipped cream, butter cream or sometimes jam can be used as an alternative.

Buñuelos de crema - Light cream puffs



  • 300 ml milk
  • 50 g butter
  • grated rind of 1 lemon
  • 1 tsp sugar
  • 225 g self-raising flour
  • pinch of salt
  • 3 eggs beaten
  • oil for shallow frying
  • 200 ml thick custard
  • icing sugar for dusting


1. Put the milk, butter, lemon rind and sugar in a saucepan over moderate heat and stir until the butter has melted.

2. Bring to the boil and simmer for 2 minutes. Beat in the flour and salt and cook, stirring constantly for 2 minutes.

3. Remove from the heat and gradually beat in the eggs, to yield a smooth batter. Pour the oil into a deep frying pan to a depth of 2.5 cm and place over a moderate heat.

4. When the oil is hot, drop teaspoonfuls of batter into the oil and fry for 4 to 5 minutes, until golden and puffy. Remove with a slotted spoon and drain on absorbent kitchen paper.

5. Allow the buñuelos to cook, then make a slit in the side of each one with the point of a knife and fill with thick custard.

6. Dust with icing sugar before serving.
