Classic cream of tomato soup. This cream soup is so simple to make, and yet it is so delicious.

Crema de tomate - Cream of tomato soup

SERVES 4

Ingredients:

  • 1 onion
  • 2 celery sticks finely chopped
  • 1 tbsp olive oil
  • 1 ltr tomato juice
  • 2 tomatoes chopped
  • 1 bay leaf
  • 2 cloves
  • 4 tbsp parsley and basil chopped
  • 1 tsp lemon juice
  • salt and black pepper

Preparation:

1. Heat the oil in a saucepan and sauté the onion on a low heat for 5 to 7 minutes without browning.


2. Add the celery and chopped tomatoes and sauté for further 5 minutes.


3. Pour in tomato juice and add bay leaf and cloves.


4. Bring to the boil and simmer gently for 15 minutes.


5. Add lemon juice, basil and parsley and season to taste.


6. Simmer for further 2 to 3 minutes.


7. Liquidise and return to the saucepan.


8. Reheat gently and serve in soup bowls with nice crusty bread.
